Something Salty, Something SWEET!

Some of you might think I ‘m wierd, but those of you that share my LOVE of FRIED PICKLES will understand!  I have found the most amazing place with the BEST FRIED PICKLES!   Have you heard of Smash Burger??  If not, jump online right now and see if there is one near you!! 

My wonderful husband who suports my strange my love of pickles  recently found these little gems!  The best part…..they are only $1.99!  Can you believe it!  You get an entire large french fry container full of sour pickle chips fried to perfection!  Not too much batter either.  My mouth is watering!

Caramel- the heart warming candy

I love this time of the year! It brings me back to the east with
falling leaves, the smell of fires burning at night in the cool air, hot cocoa,
or hot apple cider, pumpkins, family dinners, college football games, sweatshirts,
warm fuzzy socks. It is all such great memories that I could never forget. I’m
starting to plan for the family feast “Thanksgiving” and that means I
get to have some fun in the kitchen and enjoy it! Homemade this and that,
cookies, pies, treats, breads, to fill the kitchen up with all the recipe articles
that I have been ripping out from the tons of magazines that I have been saving.

ok so I’m no Martha Stewart but I’m definitely going to give it the
ole college try! So now I have to find that darn apron, I have to at least look

  • 2 1/2 cups bittersweet chocolate chips (do not exceed 61% cacao; 15 to 16 ounces), divided
  • 1 1/2 cups all purpose flour
  • 1/4 cup natural unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon instant espresso powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 2 large eggs
  • 4 candy canes or 16 red-and-white- striped hard peppermint candies, coarsely crushed

Preheat oven to 375°F. Line 2 large rimmed baking sheets with parchment paper. Stir 2 cups chocolate chips in medium metal bowl set over saucepan of simmering water until melted and smooth. Measure 2/3 cup melted chocolate; transfer to small metal bowl and reserve for drizzling.

Whisk flour, cocoa powder, baking powder, espresso powder, and salt in medium bowl. Using electric mixer, beat butter in large bowl until creamy. Add sugar and both extracts; beat until smooth. Add eggs; beat to blend. Beat in melted chocolate from medium bowl. Add dry ingredients; beat just to blend. Stir in remaining 1/2 cup chocolate chips. Measure 1 level tablespoonful dough; roll dough between palms to form ball. Place on prepared baking sheet. Repeat with remaining dough, spacing cookies 1 1/2 inches apart.

Bake cookies until cracked all over and tester inserted into center comes out with large moist crumbs attached, 8 to 9 minutes. Cool cookies on baking sheet 5 minutes. Transfer cookies on parchment paper to racks to cool completely.

Re-warm reserved 2/3 cup chocolate over small saucepan of simmering water. Using fork,drizzle chocolate over cookies. Sprinkle crushed candy canes over, arranging some pieces with red parts showing. Chill just until chocolate sets, about 20 minutes. DO AHEAD: Can be made 3 weeks ahead. Store airtight in freezer.  Bring to room temperature before serving.

Empty the bag of skittles into the bottle of Vodka. BE SURE TO TAKE OUT THE GREEN SKITTLES OR IT WILL TASTE NASTY. Leave it to sit for two days to let the skittles dissolve into the vodka. Open and drink as shots, getting all the alcohol of the vodka with all the sugar of the skittles and a lovely fruity flavour.

    • 3/4 oz Vodka (Stoli)
    • 3/4 oz Midori Melon Liqueur
    • 1 Splash Sweet And Sour
    • 1 Splash 7-Up

Bar None Drinksfeatures a Reese's Peanut Butter Cup Cocktail:

2 tbsp. Chocolate Syrup- (more)
2 tbsp.
Peanut Butter(Chunky)(more)
2 scoop(s)
Vanilla Ice Cream- (more)
1 1/2 oz.
Cocoribe- (more)
1 1/2 oz.
Vodka- (more)

Blend until smooth and pour into a cocktail glass. Drink with a straw.

Caramel Chocolate Cake!!

Are you kidding me with this recipe!  Can you say SINFUL and DELICIOUS?!?!?!  It is an amazing recipe from Brach's and a very creative way to use their Milk Maid Caramel.  This would be great for a summer party dessert!  Who can resist chocolate and caramel!  A definite crowd pleaser!  Keep the recipe near by…people are going to want it!

Brach's® Milk Maid® Caramel Chocolate Cake    Br228   

Ingredients

1 (14 oz.) pkg. Brach’s® Milk Maid® Caramels
1 box Milk Chocolate cake mix
6 ounces of chocolate chips
½ stick of butter
1/3 cup milk
½ cup chopped pecans

Directions

Prepare cake mix as directed on package. Pour half of batter into greased 9 x 13 pan. Bake for 10 minutes at 350 degrees. Meanwhile, melt caramels, butter and milk together in sauce pan on low heat, stirring constantly until caramels are melted. Remove cake from oven and pour caramel mixture over it. Top with chocolate chips and pecans. Cover remaining cake batter and return cake to oven for 30-35 minutes at 350 degrees until done. Allow to cool completely.

Chocolate Icing
• 1 can chocolate frosting
• 1/2 cup chopped pecans

Remove lid from can and microwave on high for approximately 30 seconds. Stir in chopped pecans.

Candy Cane Recipes

I found this great blog post with a fabulous recipe for what we can do with our candy canes before we start to get sick of them:

Candy Cane Lollipops

1 box cake – any flavor you want
1/2 container of cream cheese frosting
12 oz semi sweet chocolate
crushed candy cane
shredded coconut
lollipop sticks (you can find them at your local craft store)

  1. Bake the cake according to the directions on the package
  2. Once the cake has cooled, mix in 1/2 package of cream cheese frosting into the cake and roll the cake into small bite sized balls and set aside
  3. Over a double boiler melt the chocolate
  4. Prepare 2 bowls with the toppings, the crushed candy canes and shredded coconut in this case
  5. Using 2 small forks, dip the cake balls into the melted chocolate and let the extra chocolate run off.
  6. Roll it around in either the coconut or candy cane, or if you feeling really daring roll it around in both!
  7. Set onto a piece of parchment paper to cool and insert the lollipop stick

Candy Cane Ice Cream Pie

1/2 gallon peppermint ice cream OR chocolate ice cream

1 oreo cookie pie crust

Crushed Candy Canes

1.  Soften the ice cream

2.  Scoop into oreo cookie pie crust

3. Top with crushed candy canes

4. Cover with plastic wrap and refreeze

Caramel Apples- Homemade!

Caramel-apples-1_rs  So I snatched up some bulls-eyes caramel creams from the warehouse (shh!), and took them home to make caramel apples.

It started out awful as I didn't realize I was supposed to add milk to the caramels while they melted in the double boiler. But soon we had delicious caramel that I dipped my giant granny smith apples in!

I then rolled them in different flavored sprinkles, wrapped the apple in saran wrap, and tied them with a ribbon. Yeah-pretty cute I might say!

This is just one of many fun projects you can do around the holidays when you are surrounded by candy.

Toffee-bars Has anyone melted Hershey's chocolate in a double boiler to make those ridiculously sinful toffee bars? It is basically flour, brown sugar, butter, and eggs spread out on a cookie sheet in a giant rectangle. then you melt the Hershey's chocolate and pour it over the cookie, and top with crushed walnuts! Oh so good!

Candy Pie

What do we do with our left over Halloween candy….or in our house, the candy that I have slowly taken out of the kids pumpkin’s so they don’t notice their stash is getting smaller and smaller!  I found a great recipe online for Candy Pie!   It sounds so fun to make and would be great with Thanksgiving dinner too!  This recipe is quick and easy since it uses a store bought pie crust!  Feel free to substitute with a homemade crust too!

What you will need!

  •  40 pieces Mini Sized Candy Bars (of Your Choice)
  • Store bought pie crust

Preparation Instructions

Fill pie crust with whatever mix of candy suits you. It seems that a chocolate-heavy mix tasted best.  A good mix could be Snickers, Malted Milk Balls, Hershey’s Chocolate Bars, Nestle Crunch Bars, Milky Way, Reese’s Peanut Butter Cups, and M&Ms. Don’t be afraid to fill it to the top, as the candy will flatten out as it melts.

Bake in a 350°F oven for about 30 to 40 minutes, or until the candy is melted and the crust is golden. The time may vary depending on your candy mixture. Once you remove it from the oven, let it cool for at least an hour so that the filling can set.

Cut, serve and get your sweet tooth on!  My suggestion would be serving with homemade whipped cream and/or vanilla ice cream would make this even more scrumptious- you gotta cut the chocolate with a cream!
